Ingredients
- 1 lb peeled and deveined shrimp, tails removed
- 1½ cups all-purpose flour
- 3 tbsp Pool Boy Rubs Mardi Gras Cajun-Style Seasoning, plus a little extra for the shrimp
- 1 egg
- 1 tbsp crab boil
- 2 tbsp yellow mustard
- Cooking oil, for frying
- Small tortillas
- Shredded lettuce
- Diced tomato
- Diced onion
- Zesty ranch sauce
Instructions
1. Prepare the seasoned flour
Combine the flour and 2 tablespoons of Pool Boy Rubs Mardi Gras Cajun-Style Seasoning in a large bowl. Mix well and set aside.
2. Prepare the shrimp
In a separate bowl, combine the shrimp, egg, crab boil, and yellow mustard. Sprinkle in a little additional Mardi Gras Seasoning and toss until the shrimp are evenly coated.
3. Heat the oil
Heat the cooking oil to 350°F.
4. Coat the shrimp
Remove the shrimp from the wet mixture and coat each piece thoroughly in the seasoned flour mixture.
5. Fry the shrimp
Carefully place the coated shrimp into the hot oil. Fry for approximately 2–3 minutes, or until golden brown and cooked through.
Remove the shrimp and place them on a paper-towel-lined plate to drain any excess oil.
6. Build the tacos
Place several fried shrimp in each small tortilla. Top with shredded lettuce, diced tomato, diced onion, and a drizzle of zesty ranch.
Serve immediately while the shrimp are hot and crispy.
